My Go-To Slow Cooker Minestrone

As a busy mum, physiotherapist, and workshop facilitator, life can get incredibly hectic. Between managing clients, running workshops, and racing out the door for footy training, the last thing I want to do at the end of a long day is spend an hour standing over a hot stove.

That's exactly why my slow cooker becomes my best friend during the cooler months. There is nothing better than walking through the door to the comforting aroma of a hearty, home-cooked meal that's ready to serve.

Today, I'm sharing one of my all-time winter favourites: a nourishing, fuss-free Slow Cooker Minestrone. It's packed with wholesome ingredients, incredibly satisfying, and the leftovers make the perfect grab-and-go lunch for the next day.

Because we're all about making healthy living easier at The Self Project, I've designed this as a true "chop, drop and go" recipe. No need to sauté the vegetables beforehand—simply prepare your ingredients, pop them into the slow cooker, and let it do all the work.


Why This Soup Is a Longevity Powerhouse

As a physiotherapist, I'm always thinking about health through the lens of longevity—not just living longer, but feeling stronger, healthier, and more energetic as we age.

The foods we eat every day have a huge impact on how our bodies function over time, and this soup is packed with ingredients that help support long-term health.

The combination of butternut squash, zucchini and kale provides an abundance of vitamins A and C, potassium, folate and protective plant antioxidants that help reduce oxidative stress and support healthy immune function. Zucchini is particularly rich in vitamin C and potassium, both of which contribute to heart health and healthy blood pressure.

The real hero of this recipe, however, is the incredible fibre content.

With chickpeas, white beans and plenty of vegetables, every bowl provides both soluble and insoluble fibre. Fibre acts as fuel for the beneficial bacteria living in your gut microbiome. A healthy and diverse gut microbiome has been associated with:

  • Better digestive health

  • Reduced inflammation

  • Improved immune function

  • Better blood sugar regulation

  • Improved cholesterol levels

  • A reduced risk of many chronic diseases

Eating fibre-rich meals regularly is one of the simplest and most powerful ways to support healthy ageing.

So every comforting spoonful isn't just warming you up on a cold winter's evening—it's helping nourish your body for years to come.


Slow Cooker Winter Minestrone

Ingredients

  • 4 cups butternut squash, peeled and cubed

  • 1 medium zucchini, diced

  • 1 medium brown or yellow onion, finely chopped

  • 2 cloves garlic, minced

  • 1 x 400g can chickpeas, drained and rinsed

  • 1 x 400g can cannellini beans or other white beans, drained and rinsed

  • 1 x 400g can diced tomatoes

  • 1 litre vegetable stock (or chicken stock if preferred)

  • 2 cups water

  • 3 teaspoons kosher salt (or adjust to taste)

  • 1 teaspoon Italian herbs

Stir Through at the End

  • 1 cup chopped kale (or baby spinach)

  • 1 tablespoon red wine vinegar

  • 1 cup cooked small pasta such as orzo, ditalini, elbow macaroni or tubettini

Optional Toppings

  • Fresh basil pesto

  • Freshly grated Parmesan

  • Cracked black pepper

  • Crusty wholegrain bread


Method

1. Chop, Drop & Go

Place the butternut squash, zucchini, onion, garlic, chickpeas, white beans, diced tomatoes, stock, water, salt and Italian herbs into a 6-litre slow cooker. Give everything a good stir.

2. Slow Cook

Cook on:

  • HIGH: 5–6 hours

  • LOW: 7–8 hours

The soup is ready when the squash is completely soft and easily breaks apart with a spoon.

3. The Creamy Secret

Using a ladle, transfer around 2 cups of the soup—including plenty of vegetables and beans—to a blender.

Blend until completely smooth, then stir it back into the slow cooker.

This naturally thickens the soup, creating a rich, creamy texture without adding any cream.

4. Add the Greens

Stir through the chopped kale or spinach.

Cook for another 15–20 minutes until the greens have wilted.

5. Finish

Add the cooked pasta and stir through the red wine vinegar.

Taste and adjust the seasoning if needed.

6. Serve

Ladle into bowls and finish with:

  • A spoonful of fresh pesto

  • Freshly grated Parmesan

  • A little cracked black pepper

Serve with warm crusty bread for the ultimate cosy winter meal.

Healthy eating doesn't need to be complicated or time-consuming. Sometimes the simplest meals are the ones that nourish us the most.

This minestrone is one of my favourite winter staples because it ticks every box—it's affordable, packed with vegetables and plant protein, full of gut-loving fibre, freezer-friendly, and makes enough for easy lunches throughout the week.
